The market had some beautiful pastrami, and knowing I had a good deal of rye bread at home, I thought paninas and a salad would make a quick and satisfying dinner.
Process & ingredients:
Turn on panini press
(You want it very hot to make nice sear marks)
Rye bread, buttered on outside, mustard on inside
Layer accordingly:
Bread
Pastrami
Cheese
Sauerkraut/kimchi
Cheese
Pastrami
Bread
(Wet stuff should be in the center)
Serve along a simple salad of greens, tomatoes and apples, tossed with a honey vinaigrette, and that's a proper dinner in under 30 minutes.
