Broccoli and bacon linguini
Ingredients:
Slab bacon
Linguini or spaghetti
Broccolini
Fresh oregano, grape tomatoes
Lemon wedge
Cheddar cheese
Start bacon in oven at 325, timer at 30 minutes
Start a pot on heat for pasta
Ready a saute pan drizzled with oil , low heat
Chop broccolini
Add pasta to pot
Turn up heat to medium on saute pan, add broccolini. Saute for 2 minutes.
Add 1/4 cup water and cover, turn heat down to low.Timer 7 minutes.
Chop oregano, tomatoes, shave cheese
Drain pasta, place back in pot, cover
Turn off broccolini heat
Remove bacon, slice, then add bacon fat to pasta pot and toss.
Add tomatoes and oregano to pot , toss, add bacon, salt and pepper, toss and cover.
Add lemon juice, salt and pepper to broccolini
Plate pasta, add broccolini and shaved cheese.
