Pick 2 dozen grape leaves, some mint, and herbs
Gather pound of pork, onion, and cup of rice
Soak rice in pot of water, chop onion
Sautee onion, add pork, chop herbs
Pot of boiling water to blanche grape leaves
Combine drained rice, meat, herbs into bowl
Drain grape leaves
Oil into pan, add two layers of leaves
Then slice tomato and layer onto that
Create stuffed grape leaves
(not tightly, rice will expand)
Layer into pan, plate on top
Cover with chicken broth, then lid
Cook on medium, medium low for 30 minutes
Add lemon juice, cook 30 minutes more
(Meanwhile, make tzajiki sauce, cover, chill)
Let dolmas sit for ten, remove and drain
Plate, drizzle with oil
Garnish with lemon and carrots
Serve with tzajiki sauce.
