The garden should be gracing you with cucumbers; here's a delicious way to utilize them.
2 cucumbers
1 cup plain Greek yogurt
2 tablespoons fresh lemon juice
2 scallions/Egyptian crawling onions
1 garlic clove
1/3 cup loosely packed dill
1/3 cup loosely packed parsley leaves
1/3 cup loosely packed tarragon leaves
1/4 cup olive oil, plus more for drizzling
Salt
Fresh ground white pepper
Puree everything in a blender
Place in fridge for a few hours
Sample before serving to test for additional salt.
Drizzle with olive oil and garnish with tarragon
