Ingredients
• ▢ 3 cups whole wheat flour
• ▢ 1 teaspoon salt
• ▢ 1 teaspoon baking soda
• ▢ 1 teaspoon baking powder
• ▢ 1 teaspoon ground cinnamon
• ▢ 1 teaspoon nutmeg
• ▢ 3 eggs
• ▢ 1 cup coconut oil
• ▢ 1 cup coconut sugar
• ▢ 1 tablespoon vanilla extract
• ▢ 1 tablespoon lemon juice
• ▢ 1 tablespoon lemon zest
• ▢ 1 cup grated carrots
• ▢ 1 1/2 cups grated zucchini (drain of water)
• ▢ 1/2 cup pepitas
• ▢ 1/2 cup raisins
Grate veggies, let paper towels absorb moisture while you prep rest of recipe.
Mix dry ingredients into one large bowl, and wet ingredients into another bowl.
Combine, then add grated veggies, seeds and raisins
Batter should be thick, dryish, definitely not soupy.
Distribute batter into 12 muffins tins, place into middle rack of 350 degree oven, bake for around 35 minutes.
