This bright and refreshing sauce is a fun complement to rich and spicy meatballs. The sauce develops more flavor as the ingredients marinate, so best to make this first, then the meatballs.
• 1/2 cup whole milk yogurt
• 1/2 cup sour cream
• 1 small cuke, grated finely (drain away juice)
• 1 tbsp Dried dill
• 2 tsp dried thyme
• Heaping teaspoon minced garlic
• 1 Lemon, juiced
• Pinch of sugar
• 1/2 tsp Sea salt
• 1/4 tsp Black pepper. (Mix all ingredients, cover and place in fridge for an hour)
Meatballs
Preheat oven to 400
• 1 lb 80/20 Ground beef
• 1/4 cup finely grated celery
• Tsp minced garlic
• Tsp onion powder
• 1/2 tsp Ground pepper
• 1/2 tsp Salt
• 2 tsp Cumin
• 2 tsp Oregano, dried
• 1 tsp Cinnamon
• Tbsp minced fresh parsley leaves
• 1 egg
• 1/4 cup cornmeal
• 1/4 cup ground cashews
Combine everything, form into 1.5oz meatballs, place onto cookie tray.
Bake for 20 minutes, no more.
