A pureed vegetable soup is a delicious way to get a burst of nutrition, and paired with a grilled cheese and hard-boiled egg, it's a complete meal.
Ingredients shown in third pic, (missing in pictures is onion powder). Cook everything in a large pot, with Tbsp of ghee, and cup of chicken bone broth.
I blended in two batches, second one contained about 1/2 cup of parsley. Place back onto stovetop to simmer.
Spread mayo mustard blend onto bread slices, fill with cheeses, cook on medium-low, flipping as necessary. I served with sliced hard-boiled egg, and sprinkled paprika on the soup.
