An easy, healthy comfort food, perfect with blue corn chips.
11 oz container of baby spinach, chopped(much easier to cook this way) gently cooked, then drained
2 cans of chick peas, drained
Small onion, quartered
Several garlic cloves
3/4 cup grated parmesan
Juice of a large lemon
Chili powder
S & P
Put all ingredients, except spinach, into food processer. Puree for a minute or two, then add spinach, puree for another minute.
Serve room temperature or warm.
