Rendered pork fat is called lard. Lard is wonderful for baking, frying, and even making soap.
Different areas of the pig have accumulated fat, one being under the skin.
What I have cut up here is just that, and after some time in the slow cooker I will have lard in liquid form, and crispies, or pork rinds.(There was a little meat, some of which I sliced off and cooked in a cast iron, mini bacon)
