Gazpacho is a great vehicle for turning raw, garden veggies into a satisfying cold summer soup. Served with seared shrimp drizzled with Sriracha sauce, it makes for a refreshing, clean and nutritious dinner.
I used:
Cucumbers
Pears
Tomatoes
1/2 avocado
Onions
Green pepper
Fresh herbs
Garlic
Sour pickle
Pickle brine
Olive oil
Cumin
Chopped everything up, then used Smoothie mode in my Wolf blender. Twice
Searing the shrimp slightly sweetens it, and the Sriracha on top gives it that kick to make you keep going back for the Gazpacho. It's a great combo!
